Back in May, Shannon Galusha left his post as chef at Bastille to work with a new restaurant group, and now the company's first concept is about ready to open. A rep for Classic Concepts Group say that Cal's Classic American will open at Kent Station on October 22 (as always, subject to change) for lunch and dinner.
These guys know their stuff. Salvaged wood interior? Local sourcing? Check. Open kitchen? You betcha. Wood-fired pizza oven? Communal meals? Yes, indeed. Also: "Prohibition-style cocktails," beer and wine. And a covered and heated outdoor patio. Press materials describe the venue as family friendly, with the bulk of the menu falling below the $20 mark. The menu has pizzas, obviously, as well as a roster of dishes that sound hearty and accessible: chicken pot pie; chop salad; "ham shank hash" and assorted bar snacks and thoughtful kid fare.
Classic Concepts Group is headed up by Jeff Chandler, whose family is behind the Ram restaurants and brewpubs (there's one right across from Cal's). Cal's Classic American is the first of multiple concepts the group has in the works. The group reportedly has a South Lake Union restaurant in the works as well.
