The peripatetic Seattle Weekly Restaurant Reviewer, Hanna Raskin visits an Amtrak exhibit train and shares that Amtrak plans to revamp its menus to reflect regional fare. The Empire Builder, which transports passengers from Chicago to Seattle, will include an alder-planked salmon(consult by Tom Douglas natch), Beecher's Cheese, and vegan offerings such as spicy udon noodles with coconut curry noodles. Spending time aboard an Amtrak, Douglas waxes nostalgic, "Both my grandfathers are retired train men so this offers me a peek into what their day-to-day work life must have been like."
