Last month, Peter Birk left Ballard's stalwart Ray's Boathouse. Earlier this week, we learned that Birk will helm the kitchen at Harborside, previously named McCormick and Schmick's. According to a rep, Harborside and Harborside Bistro will continue the seafood focus of McCormick and Schmick's. However, Harborside will be more chef-driven than others in the chain. Per the rep, Harborside will "source only sustainable seafood that adheres to the Monterey Bay Aquarium Seafood Watch list." Will Landry's, which just acquired the McCormick and Schmick's chain use this as a laboratory for further sustainability efforts? Harborside plans to open November 22.
