Seattle Met's Allecia Vermillion says that U:Don Fresh Japanese Noodle Station will open in mid-December at a former Pita Pit location in the University District. U:Don owner Tak Kurachi tells Vermillion that unlike the udon Seattleites have sampled at other Japanese joints in town, U:Don will make their noodles fresh, in an open kitchen. The noodle bar, modeled after Chipotle's tortilla bar, will offer both hot and cold udon dishes topping out at $5.
