Olmsted particularly enjoyed his Dungeness crab, a "true regional delicacy that many consider superior to lobster as the king of crustaceans." Also a highlight, the Columbia River King Salmon cooked on an alderwood plank: "THE best salmon I have ever tasted." [Forbes]
