It looks like Skillet Diner, the bricks-and-mortar offshoot of the popular Skillet Street Food truck will be opening "around May 10th or so." In his weekly newsletter, owner Josh Henderson says "The equipment is going in today, the huge butcher block cutting board went in last week and the booths are being done right now."
The small neon sign is already affixed to the corner of the Chloe building at 14th & Union and Henderson is still collecting people's grotty, well-used old skillets for his namesake wall of...skillets. Henderson also says he'll release a black pepper and fennel version of his beloved bacon jam, probably late this summer.
