Chef Trace Wilson is leaving his post at Mulleady's Irish Pub, the Magnolia spot that has been getting some good buzz of late, including a strong showing in Eater's own Burger Week poll. Wilson is heading to Japan, where he's helping to open a tapas restaurant in Sapporo. No, seriously. He's working with Dragon Arrow Group, and says the company also wants him to revamp the burger recipe at its Hou "American steak" restaurant. Wilson had been at Mulleady's off an on since 2005, departing every so often for stints at places like Quinn's, Oddfellows and the Hi-Life.
Sous chef Tim Stewart will take over as executive chef. Diners who have ordered any of the small plate specials or desserts are likely already familiar with his work. According to Wilson, Stewart's background includes "everything from fabricating fish to brokering cheese to doing an archaeological dig in Ireland."
