EASTLAKE—The owners of Little Water Cantina say it's slated to open as planned this Thursday (yes, that's Cinco de Mayo). The modern Mexican restaurant features food from chef-owner Shannon Wilkinson, back in the Northwest after a stint in New York that includes serving as a culinary producer for Top Chef.
