As evidenced by yesterday's frenzy of Murray Stenson-related news, when a restaurant of a certain caliber opens in Seattle, the process of staffing it can ripple through the area's other top-flight establishments. Nancy Leson capped off news of the legendary barman's move from Zig Zag Cafe to RN74 Seattle with an overview of who else will be on staff. Michael Mina's wine guru Rajat Parr holds the wine director post at the forthcoming downtown restaurant, but lead sommelier will be Jeff Lindsay-Thorsen, most recently the wine director and general manager at Cafe Juanita. Dawn Smith, currently a sommelier at Holly Smith's Kirkland destination restaurant, and no relation to her boss, will take over the role.
To review, the big names in the kitchen are executive chef Michelle Retallack, who has spent 14 years with Mina, and sous chef Larkin Young, who worked closely with Maria Hines at Tilth, helped her open Golden Beetle and is doubtless a culinary presence to watch in the coming years. RN74 Seattle is set to open June 13.
