OK, so the AP is a little late to the trend of pop-up restaurants, but a story today leads with a mention of Shophouse, Wiley Frank's Monday night-only Thai restaurant at Licorous. According to the article, "Pop-ups are gaining traction as culinary schools crank out a growing number of chefs eager to reach a younger generation of restaurant-goers with an increasingly sophisticated palate." Now that you mention it, we wouldn't mind a few more pop-ups in Seattle this summer to make life interesting. [AP via MSNBC]
