Bastille Chef Leaves to Help Open a Bunch of New Restaurants

Chef Shannon Galusha, who has been in the kitchen at Bastille since it opened, is leaving to join the newly formed "Classic Concepts Group." Headed up by Jeff Chandler and Matthew Schweitzer, Classic Concepts Group has plans to open some tavern-ish restaurants around the area at a pace that is almost Tom Douglas-esque. One location at Kent Station is confirmed, with plans in South Lake Union and Gig Harbor and promises of more announcements to come.

According to Nancy Leson, Galusha recently guided the culinary direction at Poquitos, the new Capitol Hill Mexican restaurant from Bastille owners Deming Maclise and James Weimann. She says Bastille chef de cuisine Jason Stoneburner, an Ethan Stowell vet, will step up into the executive chef role. There seems to be a fair amount of shuffling going on at Bastille; opening pastry chef Laura Pyles recently moved over to Book Bindery.
