Canlis Chef Jason Franey's Food & Wine Cover is Here

This weekend Seattle subscribers should have received their copies of the new Food & Wine magazine, featuring one Jason Franey on the cover. The Canlis chef, you'll recall, was named one of the magazine's Best New Chefs in April. The honor included a New York City photo shoot with fellow honorees.

Inside, Franey describes Canlis's menu as "geeked out comfort food...no liquid gels, not here." He also shares a recipe for chilled peach soup with fresh goat cheese. A slightly extended profile is online.

Franey, who spent part of this weekend in pirate garb, wasn't the only Seattle nod in this month's issue. Artusi, open less than a week, gets a shout-out along with chef Jason Stratton (who appeared on this issue's very cover last year). On page 88, Rachel Yang of Joule and Revel tells the magazine what she consumes to start and end her day. Shockingly, neither is alcoholic.
