Another detail emerges in the yet-unfolding tale of Jamie Boudreau's forthcoming bar. Capitol Hill cocktail spot Licorous will be closing its doors on Monday to make way for Boudreau's new Canon: Whiskey and Bitters Emporium.
Jess Voelker's thoughts on the loss of Licorous: "Despite some persistent issues with customer service, the bar had an elegant and effervescent vibe and a calm, near-feminine energy that’s far too scarce in the imbibing universe." However Canon promises to be a highly exciting project, considering Boudreau's track record at Vessel, Tini Bigs and other cocktail bars around the city.
Boudreau has promised more details at the end of the month. What we do know about Canon at this point: the focus is classic cocktails, particularly brown liquor. People close to the project also get awfully coy when asked if any other big names in Seattle's cocktail world will be behind the bar. Canon will supposedly open by late summer, though CHS is skeptical since no permits have yet been issued.
The final question mark: what will become of Shophouse, the Monday night Thai pop-up that Lark sous chef Wiley Frank has been holding at Licorous since last fall? Also, 12th Avenue is getting another cocktail destination next month, when Eric Banh's Ba Bar opens with a bar manager, Daniel Jeffers, transplanted from San Francisco's Bar Agricole.
