Ethan Stowell Keeping Quiet on Charles Walpole's Replacement, But Things Are Getting Meatier

Now that Charles Walpole has moved down the street to cook at Marjorie (with long-term plans for his own project), there's the small matter of who will replace him at Anchovies & Olives. Walpole has headed up the kitchen since Ethan Stowell opened his much-accoladed Capitol Hill crudo den.

Right now you'll see Stowell himself in the kitchen on a regular basis. He has indeed selected a new chef from within his restaurant realm, but Stowell says he's waiting until next month to make an official announcement, so this person (it's a guy) has a little time to find his footing. Given Walpole's kitchen skillz and devout fan base, stepping into his former role could be a bit daunting at first.


Stowell did offer a bit of a teaser on Walpole's replacement to the biz journal's Glenn Drosendahl, telling him "Charles's palate for seafood is very seafoody. This person's seafood palate is very meaty." While Anchovies & Olives is still very much a seafood restaurant, Stowell says the new chef will likely tweak the menu a bit to include more meat-driven elements. Let the speculation begin.
