Yesterday's announcement that the owners of Cantinetta are planning an Italian market, Mercato Stellina, in Bellevue is the latest in a spate of restaurants adding retail. GlennDro says these arrangements have advantages for both restaurants and suppliers. Restaurants can sell their house-made foods, and buy in bulk to keep costs down. Local farms and other suppliers can take advantage of a "growing population density in neighborhoods likely to appreciate specialty foods." [PSBJ]
