Tavolata Sous Chef Will Head Up Anchovies & Olives

Man-of-many-restaurants Ethan Stowell has ended the weeks of agonizing mystery (well, at least legitimate curiosity) and announced that Tavolata sous chef Zach Chambers is the new chef at Anchovies & Olives. Chambers replaces the much-loved Charles Walpole, who had been with the seafood restaurant since it opened, helped garner it some national acclaim, and is now cooking at Marjorie and pursuing his own project.

Chambers came to Tavolata in 2009, and has also worked at A&O neighbor Spinasse, Olivar, and New York's Gramercy Tavern. According to the release on the hire, Chambers is interested in highlighting more local seafood rather than East Coast offerings. He and Stowell have also been working on expanding Anchovies & Olives' menu. Expect more entree-sized entrees, along with small plates and crudos. And, thank goodness, the oyster power hour isn't going anywhere. In fact, there's talk of adding more items to the happy hour menu.
