Chicago-based sandwich shop Potbelly, beloved by some, reviled by others, has set an opening date for its second Puget Sound location. The Bellevue Towers Potbelly will start slinging toasted sandwiches and milkshakes on Tuesday, August 30. The restaurant is located in the south tower, and open weekdays from 10 a.m. to 6 p.m.
Seattle first encountered Potbelly at its 4th & Pike location downtown. The sandwich shop is located next door to Michael Mina's upscale RN74 and the two projects opened their doors within a week of one another. Both openings were packed, but only one had ladies on stilts to greet diners. And let's not forget the third location in the works back in Seattle, near 3rd & Spring.
