Team Tom Douglas checked in with an update on the Saison of the Witch, the special beer developed at Elysian Brewing, which received its official name just last week. The brew will debut at Brave Horse Tavern's Oktoberfest dinner on September 20 and will be in most of the Douglas restaurants for the month of October, as well as Elysian's relocated Great Pumpkin Beer Fest. The official beer geek rundown: the brew was made from 120 pounds of roasted Baby Pam pumpkins from the Prosser farm owned by Douglas and his wife, Jackie Cross. Fennel fronds and bulbs also went into the mash, made with saison yeast for a likely 9% ABV. Beer booster Jess Voelker has been tracking some other beer collabs between Douglas beer czar Warren Peterson and local breweries. [EaterWire]
