Lunchbox Laboratory Planning a Bellevue Location

Nancy Leson surfaces to break the news that Lunchbox Laboratory is the latest restaurant to expand on the Eastside. This den of towering burgers and other glorious excess has signed a lease for the former Zen Asian Bistro address in Bellevue's Elements complex. Target open: late December.

Lunchbox Lab relocated from its original, cramped Ballard digs to a sleeker South Lake Union space in January, just two months before owner Scott Simpson took his own life at age 38 (if you haven't read Matthew Amster-Burton's remembrance, do so right now). Leson says current owner John Schmidt (who partnered with Simpson previously) plans to keep the menu and design of the new outpost consistent with the South Lake Union restaurant.
