Kirkland's bin on the lake announced late last week that it has hired Serafina/Cicchetti's Dylan Giordan to be chef de cuisine at the Woodmark Hotel restaurant. When we asked Giordan his reasons for moving across the lake, he told us, "I loved my 10 years at Serafina, and care for the restaurant and the family it creates, but it was time to move on to something different. Like during a tasting menu, it’s time for the next course!” The chef de cuisine position at bin on the lake became available, when Paul Hyland signed up to helm Marjorie's kitchen, a few months ago.
Puget Sound Business Journal's Glenn Drosendahl says that Brian Clevenger has stepped into Giordan's executive chef role at Serafina/Cicchetti. He was formerly the chef de cuisine. Per Serafina/Cicchetti owner Susan Kaufman, Clevenger has worked intermittently for her during the past seven year. During his time away from Kaufman's restaurants, he has worked at a two-star Michelin restaurant in France and Delfina in San Francisco.
