Library Bistro and Bookstore Bar at the Alexis Hotel announced yesterday that they have hired David Hatfield as their new executive chef. Hatfield, a Seattle native and a University of Washington/Seattle Central grad, most recently ran Café 3456, a farm to table Bend, Oregon eatery that is now shuttered. A bodybuilder, Hatfield was known as "The Muscle Chef" in Bend.
We asked Hatfield, what he anticipated in moving back to Seattle. He answered with the following:
It’s nice to come back to a city that truly knows what good cuisine means. Seattle foodies are quite adventurous and sophisticated and I know I won’t have to convince diners here to try something new. I’m genuinely expecting people in Seattle to embrace some of my signature dishes like my biscuits and gravy made with a French Mornay sauce and house made wild boar sausage.A rep says that Library's outgoing chef Tiffany Layco "decided to step away from being an executive chef for a while? lay low for a bit and do some traveling."
