Zephyr Paquette throws open the doors to her community-funded restaurant Skelly and the Bean tonight at 5 pm in the North Capitol Hill space previously occupied by Easy Joe's. Using the examples of chef/owner Thierry Rautureau to crowdsource/crowdfund, Paquette, a former Elliott Bay Cafe chef, opens a fifty-seat restaurant tonight, without taking on a single loan. Try Paquette's tater tots--she's rightly proud of them.
