Faster than you can spit out Landry's CEO's name(Tilman Fertitta), Peter Birk has left Harborside(formerly the SLU McCormick and Schmick's) reports Seattle Met's Allecia Vermillion. You may recall that Birk left his longtime head chef position at Ray's Boathouse six months ago to return to the McCormick and Schmick fold.
However, he may not have foreseen that Katy, Texas based Landry's would enact a hostile takeover of Portland-based McCormick and Schmick's. Harborside's redesign, renaming and chef-driven, sustainable seafood concept makes it a highly unique restaurant in the Landry's chain of seafood restaurants. Birk has landed at BOKA Kitchen + Bar.
