West Seattle Herald checks in on mobile food vendor Athena's Gyros, which is going brick and mortar. Athena's has been busy building out Zippy's Burgers' old location at 1513 S.W. Holden, and owner Nick Parisi tells the paper that he is still on track to open tax day--April 15th.
Removing a utility closet has apparently expanded seating capacity to 15-20 people. Athena's will serve a rotating selection of local beer. As for the food, the paper says that burgers are coming back to Highland Park. Athena's will serve lamb and Greek burgers. In addition, they will offer gyros, souvlaki, and falafel. If you're itching to sample the fare, a food truck offering a similar menu is onsite right now.
