Following a trend set by Marination Mobile and Skillet and continued most recently by Charlie's Buns, food truck Where Ya At Matt has decided to settle down by opening new restaurant Roux--at the Fremont spot that was home to Buckaroo Tavern for over 70 years. Build out will take a while, and they hope to open in August.
A rep tells us that the lunch menu will be very similar to what the truck currently serves--po'boys, jambalaya, gumbo, shrimp & grits, etc. In addition to lunch, Roux will have counter service breakfast, serving up beignets, traditional Herkimer coffee, and chicory coffee. For dinner, the menu will offer a few staples and "sexy-comfort food." Roux will have a full bar including a specialty cocktail menu, 8-12 beers on tap (local & NOLA brews not currently found in Seattle).
