Todd Nordahl, former owner of now shuttered Rosebud Restaurant and Bar, plans to open new venture, EVO Tapas Kitchen & Cabaret on April 28. After being approached by empire builders Chris Pardo and Laura Olson last August, he tells Eater that he'll be collaborating with the duo to open a restaurant, bar, and entertainment venue in their new nightclub The Social. Located just off Broadway, Nordahl and his team have been busy building out EVO, a 3,000 square foot restaurant/bar attached to The Social, that will cater to folks looking to have an intimate dining experience, private party, birthday or event celebration.
In the kitchen, Nordahl has recruited David K. Leopoldo, a Barrio alum, to act as head chef to prepare tapas (small plates featuring Mediterranean flavors). Starters include flat breads, empanadas, shell fish preparations and salads. Entrees include lamb, pork belly, and spareribs.
