Puget Sound Business Journal's Glenn Drosendahl interviewed James Schmidt about his newish venture, Pecado Bueno, which debuted in October 2011. Schmidt's concept for Pecado Bueno--an affordable, counter-service Mexican restaurant using quality ingredients that also has a full bar--may be scalable. The $3 all-day, any-day margarita certainly is.
But, Schmidt tells Drosendahl that he does not want Pecado Bueno to get too big: "The idea is to grow this without franchising . . . I don’t want more than five or six stores. It takes too much work. I don’t have that drive now. I’m 50 years old. I have kids. My priorities have changed.” Schmidt co-founded regional chain Taco Del Mar(which grew to 270 stores) with his brother but left the business in 2008.
