Having largely won over the Seattle critical establishment, Nathan Lockwood's Altura, a newish fine dining Italian restaurant on Broadway, has begun staffing up. This week, Altura welcomes Tim Stewart as a line cook. For the past year, Stewart has been the executive chef at Mulleady's Irish Pub and before that--was a sous chef there.
Mulleady's owner Travis Stanley-Jones tells Eater that in the short-term, they do not plan to hire a replacement executive chef, since Stewart will consult on "menu development, design, and costing." In the long term, however, Stanley-Jones says they are looking for a replacement to train up.
