Herbfarm's Ron Zimmerman Says Gluten Free Has Peaked

As a pioneer of farm to table cooking, Herbfarm's owner(and first chef) Ron Zimmerman has predicted a trend or two in the last twenty-five years. Yesterday, he tweeted the following: "Food Trends: Nitrates. Red wine. Bacon. Beef. Bread. Food "no-nos" have life cycles. No GLUTEN seems to have peaked." What will be the next verboten food?
