"...purists will point out that Texas might be better represented by an empty space in the six-pack that serves as a sauce caddy." That's not a dig guys, that's a statement about Central Texas BBQ's well-known stance that good BBQ doesn't need to be smothered in sauce. In fact, if you're smothering your BBQ in sauce, you're likely trying to compensate for the lack of flavor/quality in your smoked meats.
