Seattle Magazine's Leslie Kelly checks in on Roux, Matthew Lewis of Where Ya at Matt's forthcoming bricks and mortar restaurant. The video tour shows where an open kitchen and open bar will go. The Roux build-out team wasn't able to salvage much material from Buckaroo Tavern (which had occupied the site for 70 years). Lewis says the accents (whether brick, copper, or slate) and decor will be designed to create a "nice, warm Southern-feel." He's still looking for investors to take part in the Louisiana Purchase program and plans to open in September.
