Jim Romdall's ground-breaking, destination cocktail bar Vessel reopened in Seattle last week to much excitement. This week, Vessel added lunch service to its cocktails and dinner menu. Cameo McRoberts, who worked at Little Water Cantina briefly and with Rick Bayless and Kathy Casey before that, serves as chef. Vessel opens for lunch at 11 a.m. and has a weekday happy hour from 3 - 6 p.m.
The food menu consists largely of shareable plates and is substantially larger at dinner. One aspect that distinguishes Vessel 2.0 from the prior incarnation is that different bartenders will showcase their specialty cocktails and menus at the bar. If you're looking for burgeoning bar talent, this is the place to go.
