Not only does Ethan Stowell's new salumi bar have a name, it has a tentative opening date. According to a well-placed source inside the Stowell camp, Bar Cotto, which essentially means 'cooked,' as in prosciutto cotto (ham that's been cured and boiled as opposed to cured and dried), will open next door to Anchovies & Olives in mid-February. A&O chef Zach Chambers will head up both places.
The 1,000 square-foot Bar Cotto is meant to be a Parma-style salumi bar and pizzeria; the type of place you can pop into for a small bite and cocktail.
