Just as he's getting his authentic German bierhalle and brathaus, Altstadt, off the ground, Hitchcock chef/owner Brendan McGill has another project in the works: Hitchcock Deli Georgetown. It's going in right next door to Via Tribunali — a 1,500 square-foot space (pictured) that is currently sitting empty (although, Sub Pop did recently hold their 25th anniversary bash there). Says McGill:
I've just been wanting to do a little sandwich shop there for years. I thought it was going to be my next move before we stumbled upon the Altstadt space.
He says Hitchcock Deli Georgetown will be more focused than his original Hitchcock Deli on Bainbridge Island.
McGill says he'll start off by utilizing just the front part of the space, about 800 square-feet. He's envisioning being open daily from 10 am to 7 pm or so ("Lunch is a pretty big deal down there.") and being available in the evening for retail purchase ("People can swing by, buy some meats for their family before they head home.")
The Georgetown location will be "more of a clean concept," says McGill. He says he's going to focus on just five or six sandwiches and do a killer job at it.
Classic, classic deli sandwiches that have proven themselves out here: BLT, smoked pastrami on rye, turkey and roast beef and club with smoked ham. That will probably be where we start off.
"Of course," says McGill when asked if there will be beer and wine.
Phase two will include utilizing the back space to cure meats. "Down the road, it could be a space where we make a considerable amount of meat (a deli window, truck, commissary, etc.)"
McGill says if he had to guess, he'll be open by March 2014.
As for Altstadt:
We should be doing our soft opening stuff around the 25th (of October), and open to the public by the 1st (of November). We're almost there — buying plates, hooking up the stereo, cleaning up the dust, hanging the art.
He's also launched a Kickstarter campaign to fund some equipment (meat grinder, Polish hand-turned crockware to ferment sauerkraut). As of press time, he's raised nearly $2,000 of his $5,000 goal.
