After days, weeks, months, years of anticipation, Matthew Lewis says his restaurant, Roux, will open for dinner on Saturday, October 26 at 5 pm. That entire next week will be dinner-only, with breakfast and lunch service rolling out shortly after (November 4-ish).
A few soft openings are planned before the grand reveal (in which the facade will finally come off). An open house earlier this month saw a couple hundred eager fans and a menu of Gulf shrimp, fried oysters and beignets.
Lewis and his chef, Mikey Robertshaw, are also using this extra time in the trenches to perfect their gator wings and Louisiana frog recipes (yes, those are actual menu items) - and finishing up chandeliers constructed of empty hot sauce bottles (like, hundreds of them). Barman extraordinaire, Ian Cargill (formerly of Tavern Law, Vito's) will be in charge of the cocktail program. And don't forget to try the chicory beer.
