Puget Sound Business Journal checks in with chefs Thierry Rautureau and Jason Wilson to get a progress report on their respective downtown restaurants — both expected to open around the same time.
The former's three-story Loulay at Sixth and Union (the Sheraton Hotel block) could open the first week of December — the same week Jason Wilson's Miller's Guild is slated to start operations in Hotel Max. Wilson tells PSBJ the "steakhouse and so much more" will open first for dinner, followed by breakfast, lunch and happy hour in mid-January.
Of Miller's Guild, Wilson says he wants breakfast and lunch to appeal to the business folks in the area, their tastes and time schedules. And, "I see it as everyday approachable dining," ranging from a $2.75 breakfast muffin to a two-pound, dry-aged steak for $125.
