Look Inside Kaisho, Modern Day Izakaya in Bellevue

What was once Boom Noodle is now Kaisho, a high-end izakaya concept from the same team behind Boom. It opened Monday.

Kaisho is spearheaded by Jeffrey Lunak, former protégé of Iron Chef Masaharu Morimoto.

Small plates (smoked brisket and kimchee gyoza), large plates (Hong Kong style pork shank crispy noodles) and family-style dishes (Thai fried chicken and kimchee waffles) are all on the menu. Kaisho also offers a stocked bar of Japanese beers, aged whiskies and the usual pedestrian drinks.

Next up for Boom management: replacing the Boom Noodle on Capitol Hill with their other popular concept, Blue C Sushi.
