The logs are stacked, the flame-resistant aprons are ready to be worn, and after a week of practice, Jason Wilson is ready to unveil his new wood-fired concept in Hotel Max to the public tonight.
A complete departure from his other restaurant, Crush, Miller's Guild is a way more casual restaurant, a small affair off the lobby with just 76 seats so that, according to Wilson, "everyone will be comfortable, and able to be engaged in the action at the grill and at the bar."
The heart beat of the restaurant is an open kitchen with a 9-foot long, custom-made, wood-burning Infierno grill, which is used to cook the majority of the menu, which consists of meat, seafood and vegetables.
Dinner is offered nightly starting at 5 pm, with lunch and brunch to follow sometime in early 2014.
