The family behind Seattle's beloved Il Terrazzo Carmine plans to open a cicchetti bar called Intermezzo next spring.
Maria Smeraldo, wife of the late Carmine Smeraldo, tells the Puget Sound Business Journal, "It's a little taste before the full-on dinner," adding that she feels the new adjoining space will attract a new clientele.
She also reveals that all of those "secret recipes" from Carmine, like the sauces, stocks and other original recipes, are now trademarked. "Son Philip spent two years in the kitchen learning the secrets and documenting them. Philip has it in his brain. Carmine had it in his head. Now it's in a book, and the book is kept in a safe."
Look for Intermezzo to open sometime around late March, 2014.
