Le Caviste Wine Bar 'Painfully Close' to Opening

The former and beloved Le Gourmand sommelier, David Butler, says he's "painfully close" to opening his wine bar, Le Caviste. He says:

I am reluctant to say a date, because when I do, it grows legs and moves. However, I will say this: Something would have to go horribly wrong to keep me from opening before Christmas. Now I've done it!
