Currently knee-deep in a kitchen remodel that will allow them more elbow room in their culinary playground, Canlis is also making way for two new cooks. Their latest hire is Larkin Young, the former sous for RN74 and Chef de Cuisine at Tilth. Says Young:
I think this will be a good fit. I'm excited to work for the nicest restaurant in the Pacific Northwest, and for a chef (Jason Franey) with great attention to detail. I admire how the Canlis boys are always looking to improve the dining experience in one form or another and their amazing insight with guests.
This will be Youngs's first full-time kitchen gig since leaving RN74 nearly a year ago. The hiatus, he says, really gave him some insight on the direction he wants to take with his career — including potentially opening his own place someday. Young starts on the Canlis line Friday.
