Behold the Delightfully Elegant Bar Sajor

Matt Dillon's new Bar Sajor has been open for a week and a day, and has already attracted a loyal following of neighborhood dwellers and those wanting to be enshrouded in one of the more beautiful spaces in Seattle. Order up a glass of something comforting (wine, beer, bubbles, kombucha on draft, quince soda) and a plate of something incredibly locally-rooted, like a fried egg with stinging nettles and trumpets of death mushrooms ($16), albacore with smashed avocado and Israeli za'atar ($15) and resident king salmon roasted in buttermilk with crispy fava bean leaves ($26). It doesn't take much to be satiated here.
