As part of Eater's second ever Burger Week, chefs at several Seattle restaurants have happily agreed to make a special limited edition burger — some of which will be featured on their menus. Today, the Caramel Apple Burger courtesy of Unicorn chef Josh Nebe.
Perhaps no other Seattle chef plays around with hamburgers more than Unicorn's Josh Nebe. His carnival-themed menu is filled with crazy-ass burgers, corn dogs and other Big Top treats. So when this challenge was offered up, he quickly grabbed it by the reins and rode it around like a dog and pony show.
I really wanted to do something carnival inspired, so we went with the idea of a caramel apple. I thought it would be totally fantastic to have a slaw made out of a gooey and crispy mixture of apples, cabbage and caramel. It sounded awesome. So, we put that on top of a seared lamb patty with Havarti with some bacon. Lamb, Havarti and bacon? Yes, please. I think the Havarti complements the burger perfectly with its creaminess. The bun is a great sesame bun, steamed and toasted. A little aioli and pepper finish of the burger. It will be running on the menu at Unicorn all week for $13. And as the Unicorn does, for some extra coin, you can have your entire burger deep-fried. Necessary? No. Delicious? Yes.
