Billy Beach, the chef who's had a hand in I Love Sushi, Wasabi Bistro, Umi Sake House, Kushibar, and Japonessa, is now lending his chef talents — and for the first time, his name — to a new sushi bar in the old Paratii Craft Bar space in Ballard. The aptly named Billy Beach Sushi & Bar opened officially (and without a lot of fanfare) yesterday.

The place serves lunch and dinner daily, but it's the happy hour that will likely be the draw here; it's offered twice daily — from 4 to 7:30 pm and 10 pm to close — and all day Sunday. That's how Billy rolls.
