LYNNWOOD— Remember this charcuterie/butcher shop idea that had high hopes of opening in Ballard? Well, it's open, but in the form of a deli in the back of a gas station in Lynnwood, which just happens to be equipped with a full commercial kitchen. Owner Michael LaRoche, who had been spending his days behind the counter at Dot's, says everything at the Piggyback Deli "is made from scratch except the bread and cheese." He adds, "We are playing with the fact it's in a gas station by making stuff like grass-fed hot dogs and jerky and all those fun things to sell as well as the sandwiches." They just opened a week ago. Here's their Facebook page filled will all sorts of mouth-watering photos. [EaterWire]
