Skillet Bacon Jam got a makeover with the help of some famous science nerds. Josh Henderson and his crew approached Modernist Cuisine to work on some improvements with the popular condiment to make it more closely resemble the Bacon Jam made in the Skillet kitchens. Long scientific explanation condensed: MC took out some ingredients and added an ingredient that ultimately helped with the emulsification of fat (condensed x2: made it look pretty).
