Both Walrus and the Carpenter and Elliott's land on Food & Wine's list of America's best oyster bars. Of Walrus, F&W writes: "The selection constantly changes, but often includes sweet oysters from Samish Bay, and Hama Hama oysters from the mid-Hood Canal." The staff at Elliott's gets a nod for volunteering "their extra time to help seed, tend and harvest the oyster beds of a local community shellfish farm." [F&W]
