Here's a Photo of Roux's Chicory Beer Being Made

Matthew Lewis is close to opening his first restaurant, Roux, in Fremont. The interior of the place is rolling right along and now, photo evidence that another (possibly the most) important detail is currently moving into place: the restaurant's signature beer.

During a batch-mixing break (see above) this morning, Where Ya At Matt explained his Elysian-brewed beer. "It will be a toasted amber with chicory. Pliney, Yakima hops are being used. It should be a smooth, slightly caramelly brew that will finish crisp and dry."

The name has yet to be determined, but Roux Brew has a nice ring to it, no?
