Later on that evening, the audience was invited to Poquitos, a Seattle Mexican restaurant, to take part in a live session of FoodieChats on Twitter with Bayless. FoodieChats take place every week, asking Twitter users 10 questions related to the food topic of the week.

The duo treated the audience of bloggers and local industry folk to great culinary tips, such as how to use beer to enhance the flavor of sautéed mushrooms and chocolate ice cream. Bayless also divulged some personal trivia, including that his love for Mexican cooking and cuisine began after his first trip there at the age of 14. The audience was treated to a variety of dishes cooked up during the "Chef Challenge," including Bayless's pork tacos and Douglas's black bean soup.

On Thursday, August 22, Chef Rick Bayless hit Seattle for an exclusive cooking demonstration, pairing Negra Modelo with his fresh take on Mexican cuisine. Billed as a "Chef Challenge," the event was more of a banter and culinary demo between Bayless and Seattle restaurateur Tom Douglas, with Chef in the Hat's Thierry Rautureau serving as moderator.
