Listen to Tom Douglas talk about why he's against "living wage" laws. Douglas, who just upped the pay for his dishwashers and cooks, tells NPR that his goal is to create a merit system that is "more reflective of the value of what being a chef is." He says he was not motivated by the living wage law, because, "In my mind, you have to be the business owner who wants to do it. I'm not a big believer in the whole government mandate." [NPR]
